 sweet potato salad


2 large (2-1/2 lb) cans sweet potatoes
6 eggs, hard boiled and chopped
1 cup finely chopped celery
4 finely chopped green onions
1-1/2 cup mayonnaise
1/3 cup whipping cream
2 tsp “Durkee’s” chopped dry onion
1 dash salt
1 dash pepper

 

Drain the sweet potatoes, then mash in a large bowl. Add the chopped celery and onions and mix.

Mix together in a small bowl the mayonnaise, whipping cream, “Durkee’s” dry onion, and salt & pepper. Combine this sauce with the sweet potatoes. Gently add the chopped hard boiled eggs.

Serves 6.
